Course Structure

The total number of Units of Competency to receive the SIT30821 Certificate III in Commercial Cookery qualification is 25 comprising of 20 core and 5 elective units. The list of units for each delivery mode can be found on the relevant course brochure:

  1. Course Brochure - Work-Based Training (Apprenticeship or Fee-for-service students)

  2. Course Brochure - International Students

  3. Course Brochure - Domestic Students/CBT

Course Delivery Modes
  1. Work-based Training (WBT) - Flexible delivery, designed for Apprentice Chefs in Canberra or fee-for-service students currently working in a commercial kitchen anywhere in Australia.

  2. Classroom-Based Training (CBT) - Structured delivery, designed for full-time domestic and international students. This training is delivered entirely in a classroom setting and a fully equipped commercial training kitchen.

Course Duration

Work-Based Training

  • 12 - 36 months, depending on the number of credit transfers and the individual progress of each student/apprentice. At a minimum,  students/apprentices are expected to complete one unit of competency per month over the duration of the SIT30821 Certificate III in Commercial Cookery in Canberra, ACT. 

Classroom- Based Training

  • Full-time International and Domestic Students

  • 52 weeks including 12 weeks of holidays.  

Job Outcomes

Commis Chef Work as a junior chef assisting senior chefs with food preparation, kitchen operations, and menu execution. Café / Bistro Cook Oversee food preparation in casual dining venues, focusing on fast-paced service and quality meals. Catering Cook Deliver meals for functions, events, or large-scale catering operations with attention to timing and consistency. Hotel or Resort Cook Prepare meals for guests in accommodation venues, often across breakfast, lunch, and fine-dining services. Club Cook Cook meals in licensed or community club venues, balancing casual dining with event catering.

Admission Requirements

Apprenticeship Pathway

  1. Employed in a fully operational commercial kitchen environment and have a supporting employer;

  2. Sound English language, literacy and numeracy skills (ACSF – Level 3);

  3. At least 15 years of age.

 

International Students 

  1. Must be at least 18 years of age;

  2. Proficient English language skills equivalent to IELTS 6.0. Our preferred method is Pearson Test of English (PTE Academic) - A minimum overall score of 50, with no communicative skill score below 42.

Further Study Pathways

After achieving the SIT30821 Certificate III in Commercial Cookery in Canberra, candidates may undertake SIT40521 Certificate IV in Kitchen Management.
