Course Description

Course Delivery Modes
  1. Work-based Training (WBT) - Designed for Apprentices or fee-for-service students currently working in a commercial kitchen.

  2. Classroom-Based Training (CBT) - Designed for full-time domestic and international students. This training is delivered entirely in a classroom setting and a fully equipped commercial training kitchen.

Course Study Pathways
  1. Australian Apprenticeship (WBT only)

  2. Full-time student (CBT only)

  3. ​Part-time student (WBT only)

  4. RPL 

Admission Requirements
  1. To undertake the Work-based Training pathway you must be employed in a fully operational commercial kitchen environment;

  2. Sound English language, literacy and numeracy skills (ACSF – Level 3);

  3. At least 15 years of age.

Australian Apprentice Training Support Payment

Receive the Australian Apprentice Training Support Payment of up to $5,000 over two years while completing this qualification through an apprenticeship pathway (subject to approval by the Apprenticeship Connect provider).

Course Structure

The total number of Units of Competency to receive this qualification is 25 comprising of 20 core and 5 elective units. The list of units for each delivery mode can be found on the relevant course brochure:

Course Duration

Work-Based: 12 - 36 months, depending on the number of credit transfers and the individual progress of each student. At a minimum,  students are expected to complete one unit of competency per month. 

Classroom- Based: 52 weeks including 12 weeks of holidays.
